This easy, comforting tomato soup comes together in no time with simple, fresh ingredients and rich, savory flavor.

Ingredients

  • 2 Tbsp. olive oil
  • 1 onion, chopped
  • 3 garlic cloves
  • 1 Tbsp. tomato paste
  • 1.5 cup chicken or vegetable stock
  • 1 28 oz. can whole peeled tomatoes or 2# fresh tomatoes, chopped
  • 1 Tbsp. sugar
  • salt
  • 8 – 10 fresh basil leaves, sliced thin. (optional)

 Directions

  1. Heat the olive oil in a small pot.
  2. Add the onions and garlic and sauté until translucent, about 5-7 minutes.
  3. Stir in the tomato paste and cook for one minute. You’ll notice the color of the tomato paste turns a rusty color. This is good.
  4. Add the tomatoes, stock, and season with salt.
  5. Simmer uncovered for 20-25 minutes.
  6. Blend until smooth using a blender or immersion blender.
  7. Add the sugar (if needed), season with salt and pepper, and add the basil.
  8. Check the consistency of the soup. If it’s too thick, add a little more stock.
  9. Serve and enjoy.
