Ingredients
- 2 Tbsp. olive oil
- 1 onion, chopped
- 3 garlic cloves
- 1 Tbsp. tomato paste
- 1.5 cup chicken or vegetable stock
- 1 28 oz. can whole peeled tomatoes or 2# fresh tomatoes, chopped
- 1 Tbsp. sugar
- salt
- 8 – 10 fresh basil leaves, sliced thin. (optional)
Directions
- Heat the olive oil in a small pot.
- Add the onions and garlic and sauté until translucent, about 5-7 minutes.
- Stir in the tomato paste and cook for one minute. You’ll notice the color of the tomato paste turns a rusty color. This is good.
- Add the tomatoes, stock, and season with salt.
- Simmer uncovered for 20-25 minutes.
- Blend until smooth using a blender or immersion blender.
- Add the sugar (if needed), season with salt and pepper, and add the basil.
- Check the consistency of the soup. If it’s too thick, add a little more stock.
- Serve and enjoy.
