Ingredients:

  • 1/2 cup hummus
  • 4 8-inch whole wheat tortillas
  • 1 cup spinach, shredded
  • 2/3 cup red cabbage, shredded
  • 1/3 cup broccoli, chopped
  • 1/3 cup carrots, grated
  • 1/4 cup parmesan cheese, grated

Directions:

  1. Spread about 2 Tablespoons of hummus over one side of each tortilla.
  2. Divide remaining ingredients evenly among tortillas.
  3. Roll up tortillas and cut in half to serve.
