Ingredients:

  • 1 pressed clove garlic
  • 1 finely chopped shallot
  • 2 Tablespoon Dijon mustard
  • 1/4 cup vinegar
  • 1/2 cup olive oil as needed

Directions:

  1. Mix all ingredients, then whisk rapidly and add as much oil as needed while whisking
  2. Add to salad greens, tomatoes, apricots, nuts, and other salad ingredients
