As one of the Food is Medicine (FIM) Registered Dietitians, Lauren works with Fresh Fork Market and collaborates on our other FIM research initiatives. Through these initiatives, she works directly with community members to educate them on nutritious eating and healthy cooking strategies. Her part in remedying chronic health conditions through food will hopefully lead to policy change in the service of improving community health outcomes.

Lauren earned her Bachelor of Science from Southeast Missouri State University in Nutrition with a minor in Health Promotion. Following that, she completed her Dietetic Internship through SEMO as well. She has volunteered at senior centers, small businesses, elementary schools, and urban gardens.

During college, Lauren was an Ohio Valley Conference (OVC) Academic Medal of Honor recipient on multiple occasions, OVC Newcomer of the Year, and OVC All-Conference 1st & 2nd Team. She graduated Summa Cum Laude with Honors and was Captain of the SEMO soccer team. Lauren is a Women’s Premier Soccer League National Champion – her team won the 2017 semi-pro finals in California.

When Lauren isn’t working, she loves traveling to new continents, and outdoor activities like hiking, biking, kayaking, and gardening. She also enjoys reading, baking, exploring locally-owned businesses, and simply trying new things.

“Food is an intricate part of human life. On its most basic level, it is sustenance, but it is also deeply intertwined with our culture, emotions, and identity. Something of this sort should not be tainted with feelings of fear or uncertainty. My hope is that through my education and experiences, I can help others in healing their relationship with food and working towards a healthier future.”
